That evening, the plates swirled around: delicate octopus surrounded by kadaif noodles, aubergine crème brûlée, black tahini and tarragon powder; crazy trumpets-de-de-de-mort in a sauté pan, full-bodied jus de jus with soy sauce, roasted pistachios, shallots and spring onions; regressive crispy rice cake, roasted porcini mushrooms and mascarpone; explosive pork belly confit, raw oyster and in emulsion, spring onions, dill and pumpkin seeds; before a very serious pistachio brownie sweetened with a tonka bean whipped cream, or a baked apple with lime, coconut, dehydrated dill and iron-seared meringue, in an explosive burnt-acid marriage.
